meat turned white in slow cooker?

I followed the recipe using large slab of beef. I used about one and a half cups of broth, filling the pot about a quarter of the way.

six hours later the top, unsubmerged part of the meat turned white. is that ok? pics attached Reading More May Cause Envy…
