Flanken! Help!
I thought the long thin strips WERE flanken-style. I always call the shorter, stubby square blocks English-style.
ETA, I did once get the thin flanken style ribs (I bought short ribs from a local purveyor of grassfed beef). I braised them and the dish turned out just fine. You might just Reading More May Cause Envy…
