I butchered up a duck to confit the dark meat and sear the breast to medium rare. I left in the wing bone because I figured I head nothing else to do with the wing (I cut the tips off). I think they call this an airline breast Reading More May Cause Envy…

When I watch chefs and good cooks on tv, I'm so envious of their skills. This blog is the closest I get to cooking, other than the microwave ;)
