Roasting with EVOO in oven at 425 degrees F?
Is it nutritionally safe to roast vegetables like this in an oven heated to 425 degrees Fahrenheit when the vegetables are coated in extra-virgin olive oil? My fear is that the oil would become toxic by reaching its smoke point. If extra-virgin olive oil would be dangerous to Reading More May Cause Envy…
