Deep Frying in Clarified Butter or Ghee?
Anyone do this or even ever seen it done? I worked in French restaurants where we clarified butter every day to saute with but never thought to try deep frying anything. Now, I wonder why? The smoke point is plenty high enough. Is it done in Indian cuisine? Reading More May Cause Envy…
