ISO good recipe for crustless artichoke squares/spinach squares
I make this often, with spinach, artichokes, broccoli, kale or a combo
- sauté onion, garlic In a spoonful of olive oil
- add vegetables, sauté till cooked down (spinach, kale) or defrosted and softened (broccoli, artichokes)
-remove from fire, stir in cottage cheese, shredded mozzarella, and eggs
