Ice Cream Making - what does higher fat do for the finished product?

From my experience the more water content (like milk- less fat) the harder it is but then again milk has more sugar then cream so doesn’t get too hard.
Only suggestion is do not use all heavy cream. I did that once and it was so creamy I got a Reading More May Cause Envy…
