I use Hodgkin's Mill pancake mix. I always add more than the egg, oil and milk (I use almond milk). I also add cinnamon, vanilla, chia, salt and some form of sweetener. Sometimes I add pumpkin puree or ripened bananas too. Oh and chopped walnuts too. SO good!
