Whole Pig Roast - how to hold it for hours before serving?

How far in advance of serving have you FINISHED the roasting, and what did you do to hold it? In the past, the roasts I’ve done in a caja china were served immediately, but now I’m doing one for my wedding, Reading More May Cause Envy…
