Bugialli on pasta
Have other hounds cooked pasta dishes from Bugialli’s books? What’s been your experience and what recipes do you like/dislike?
I typically follow his sauce and pasta shaping advice verbatim, but for the pasta I often do a hybrid between his dough and Cook’s Illustrated’s food processor methods. I’ve never had a Reading More May Cause Envy…
