Salmon Rillettes - substitute for Pernod?

I am a fan of rillettes of all sorts, though the classic with pork is my favorite. However, I dislike anise flavor in general and Pernod in particular. Any suggestions for a non-anise substitute that would pair well with the salmon? Reading More May Cause Envy…
