Second try with octopus
Some time ago I started a thread regarding octopus:

This time around, I won’t be using the approach from last time, which resulted in not-so-tender but especially too vinegary a flavor. I’m realizing that pretty consistently with various meats, I’m not generally into assertive employments of vinegar, Sauerbraten excepted.
