substituting some oatmeal for part of the flour in muffin recipe
My standard muffin recipe is 1 1/2 cups of flour and 1 cup of oats. Since most muffin recipes are 2 cups of flour, I would guess you should be ok to sub 1/4 cup of flour with 1/2 cups of oats. Muffins are pretty tolerant… and if Reading More May Cause Envy…
