Has Anyone Compared Masa Harina and Masa Arepa?
The former, Mexican, is made w/ flaked lime /ash. The latter is a So.American precooked cornmeal flour/no ash IIRC. I’m looking to experiment with cooking a meat patty, surrounding it w/ a masa, and frying it so it is a thick masa cake, crunchy on the outside and revealing Reading More May Cause Envy…
