Risotto -- can I make it ahead?
I’m planning a meal for company where the entree will include grilled veal chops and risotto Milanese. Can I prepare the risotto, or even partially prepare it — maybe not adding the Parmesan cheese until serving — earlier in the day and then reheat it at serving time without Reading More May Cause Envy…
