Can I use butter instead of oil when I sous vide?
I’m presuming this is butter in the bag and not actual butter in the tank (FWIW there are people who have done oil in the tank).
Butter works great with chicken, not so hot with beef as it (for me) seems to take away some of the beefiness from the finished Reading More May Cause Envy…
