Anyone have a good cheddar potato soup recipe?

I’ve been scouring the internet for a quick and easy cheesy potato soup recipe, but somehow I can’t find one that meets all my requirements.
Does anyone have a good recipe that
a) is made from scratch (chicken broth is ok but no “cream of” soups)
b) uses diced potatoes Reading More May Cause Envy…
