High grade burger

I’m hungry for a high grade home burger. I’ll use home grinder and it will be cooked med-rare to rare. Seared on out side; bloody inside. Juicy and a little greasy!
Thinking about topping with caramelized shallots, cheddar and some bacon?
I would appreciate your suggestions on best meat(s)to grind.
