Rouladen?

I am having a dinner party in a few weeks and am planning to make beef rouladen (we are having an Oktoberfest theme) and I am wondering about how far I can go in preparing it. I am wondering about getting to fully-assmebled and then putting it into Reading More May Cause Envy…
