Stretch and Fold Baguette Help
This recipe http://www.weekendbakery.com/posts/recipe-for-80-hydration-baguette/ combines a poolish with a stretch and fold to make a gorgeous baguette. It appeals to me because I lack the fridge space to store long-fermenting no-knead doughs, yet it still gives a nice open crumb. But the sticky countertop is something I’d rather avoid.
