JC steamed/roasted goose - any ahead of time tricks?

I’ve a lovely big goose in my fridge, and am planning on doing Julia’s steamed/braised/roast recipe tomorrow afternoon, for a feast tomorrow evening. Through a complicated series of events, I may have to be out of the house from about 1:45 to 5:30, which Reading More May Cause Envy…
