Trying to make the chocolate chip cheesecake from Gullifty's in Pittsburgh

One of the best cheesecakes I’ve ever eaten was the chocolate chip cheesecake at the now-defunct Gullifty’s in the Squirrel Hill neighborhood of Pittsburgh. It was a tender, not-too-sweet cheesecake, lighter than a New York cheesecake but still quite dense and cream-cheesy, with a chocolate cookie crust, and Reading More May Cause Envy…
