Basil Pesto in bulk
I am replying to myself (again) as I had the same issue and had a really good solution. This tastes perfectly balanced:
250g basil (after destemming and cleaning/drying)
20g of toasted pine nuts
8g kosher salt
100g grated “Parmesan” (I used Grana Padano)
75 ml pure olive oil
75 ml extra virgin olive oil
