Beautiful, Moist, Tough Turkey. What Happened?
Don’t go hotter! I tuned into this exchange to find out why my beautiful organic free-range 12-pound turkey (which I spatchcocked) came out so tough. I had roasted it at 450! The temperature seems to me to be the key, though I figure “free-range” might be Reading More May Cause Envy…
