Brisket is Tough - what went wrong???

Hi everyone – I did my brisket like always, but it’s definitely going to be a disappointment this year!
First I seared it. Then, roasted it in a sealed dutch oven in the oven at 300, til it was at 195. It was only 3 pounds, so it only took Reading More May Cause Envy…
