Why does my flan take forever to set in the oven?

I pretty much use the above linked recipe, but in my bain marie I put a tea towel. (I don’t use fat free evaporated milk, that’s probably the only other change I make.)
The recipe says it takes 50-60 mins to cook in the 350 degree oven to set and still Reading More May Cause Envy…
