Eggplant Meatballs?
I want to make breaded, fried eggplant meatballs. I’ve never made them. There are many recipes online for these including some that use diced (peeled or unpeeled) eggplant sauteed, others that use roasted eggplant pulp, like baba ganoush, pureed in a food processor .
