Seafood Batter, Eggs or No Eggs?
Some batters for deep frying seafood have eggs in them, others don’t. I currently use equal parts all-purpose and rice flour, baking powder, beer or club soda or both salt & pepper, maybe some Old Bay. I like a very crispy (one Hound described it perfectly as “shattery”) coating. Would Reading More May Cause Envy…
