Venison Porchetta
Deboned Shoulder Roast with most fat removed, trimmed and sliced to roll out flat.
Drizzle with EVOO, sprinkle chopped garlic, rosemary, parsley, sage, lemon zest, orange zest, red pepper flakes, fennel seed, and generous S+P.
