I recently made Henry Hugh’s Chinkiang Pork Chops from Grace Young’s Breath of a Wok. The sauce reminds me of Peking Pork Chops pictured here https://www.lauhound.com/2012/03/imperial-palace-east-lake-seafood-restaurant-my-favorite-chinese-restaurant-in-new-york/

However I wished the pork chop had a crisper breading. Anyone has a recipe they’d care to share?
